Soil: volcanic clayey
Altitude: between 400 and 600 m. asl
Harvest: mid October
Vinification: cryomaceration of grapes for 24/48 hours at 4 ° C. After a soft pressing, must ferments at law controlled temperature off the skins (13/16 ° C) with cryophilic yeast
Ageing: in stainless steel on fine lees with batonnage
Bottle ageing: at least 2 months

Colour: straw yellow with greenish reflections

Flavour: pleasantly dry, fruity, with a well balanced aciity. Nice notes of pineapple, apricot, banana and almond in the aftertaste
Food pairing: all fish dishes, shellfish. Very good with fatty fish dishes like salmon and trout
